    -rice vinegar

    -some salt

    -and sugar..

  • Hi Momo! If the general white short or medium-grain rice is qualified enough to be made into sushi rice. Do you think arborio, risotto, haiga and brown short or medium-grain rice be qualified enough to be made into sushi rice as well?

    Hi dafranx , in general , the short japonica variety would be the best. But as some Chefs out there that i know would mentioned ; you can use the short risotto varieties as it is similar to the qualities of the japonica variety.

    Medium grain , Long grain = Both are not suitable for Japanese Sushi Rice.

    Brown short rice is not recommended either - as it crumbles too easily. I had tried it in Taiwan and it requires too much liquid to make it suitable for use as a Sushi Rice.

    Hi tracrit , if 4 Cups of Rice = 1 Cup of Sushi Vinegar.

    You can do the mathematical calculations for 1 Cup of Sushi Rice.

    1 Cup of Sushi Rice ( requires ) , 1/4 cup of Sushi Vinegar.

  • @Launa23 If you refrigerate sushi rice, it will ruin it. It will harden and become unusable.

  • @Launa23 if you must refrigerate the rice, you to steam the rice afterwards and cool it again. You also may want to add a little more vinegar since when it is re-steamed, you will lose some due to evaporation.

  • Sushi Vinegar =

    5 Tbsp Unseasoned Rice Vinegar

    5 Tbsp Sugar

    4 Tsp Sea Salt (table salt may be substituted, sea salt tastes better less msg)

    Mix vinegar sugar and salt in a glass/cup, warm in microwave 10-15sec (do not let it boil!), remove from microwave stir to melt salt/sugar. repeat warming/stiring if necessary, sometimes I let it sit 10-15 minutes between heating/stiring. I keep an extra empty rice vinegar bottle I pour the prepared sushi vinegar back into and keep it handy in the fridge.

  • The point of the fan is to remove excess moisture. So yes, you can use an electric fan.

  • @MT12XD - long grain rice does not have enough starch for it to stick. you must use short grain rice.

  • @MT12XD long grain rice will not work, but if you cannot get short grain rice you can substitute medium grain rice. I use medium grain rice because the short grain rice (calrose) my grocer has is too starchy, medium grain works quite well.

  • Actually, there are two types of japanese rice vinagers. One is seasoned and one isn't. You want to get the seasoned rice vinegar, that one is for sushi.
