A more authentic way to go would be to get "chuka soba"; the ones I got at Kroger's are about the shape of a vhs, with a red front & yellow noodles. It's labelled "Wel-Pac Chow mein stir-fry noodles". If you can't find chuka noodles though, a generally accepted substitution would be ramen noodles. (I use those personally unless I'm making a special dish). Just make sure to under-cook them.
I'm not sure what you mean exactly... You're not supposed to use actual soba in yakisoba (soba are the dark brown buckwheat noodles that look kind of like cardboard), you're supposed to use wheat-based noodles (which look similar to ramen noodles).
@sailorbunny1010 I think they already have a video with spring rolls, but I'm not so sure about the stir fry. There is one with udon noodles and it looks really good.

omg shut up about the dog sittin there and it being unsanitary... you are not at a damn restaurant. It makes it cute and diffrent that the dog is doin the naration, and its better to watch than some lame chef with a droning on voice tellin u waht to do while they breath heavy over a pan.
I like to put green bell peppers in mine, too. If you have okonomiyaki sauce, you can use that as a fairly close substitute to yakisoba sauce (if you don't like having multiple single-purpose sauces). I've also used spaghetti instead of ramen when I don't have or can't get ramen. It's fairly close, but not the same.
ForgeTheFun, Japanese carrots are always that big on their markets, I think it's because Japanese people use it decoratively in many dishes. Their food is for the eye as well as the stomach. This looks delicious !!!

My yakisoba sauce lists:
Vinegar, corn syrup, fruits and vegetables (tomato, onion, apple, carrot, peach, date, orange, and garlic), water, sugar, soy protein, soy sauce, salt, food starch, spices, coloring, kelp extract, yeast extract, guar gum, and kelp.
I'm pretty sure I have an authentic home-made yakisoba sauce recipe floating around somewhere I can dig up too if you REALLY want it though, lol.
