They never play at the same time in-game, yet they do here in the whole video.

and i think this one is okay but i was never a fan of any of the special cups courses

(especially rainbow road)

First in the beta version this track's name was Yoshi Desert Ruins (like a predecessor of Yoshi Desert of MK: SC), but they decided to change its name.
