  • Absolutely. Cold smoked bacon is delicious! You would prepare the cure the same way but cold smoke intermittently over the course of a couple days. If you check out the stephensonandduess website, you'll be able to find a short video in which Andreas shows off his cold smoker.

  • There are many ways of preparing bacon and we are presenting just one of those possibilities - check out the site for more detail. If you look at the many bacon recipes online or in books, you'll find examples of both cold and hot smoked bacon. The important thing with hot smoked bacon is to keep the bacon under 140ish degrees because this is the temp at which the fat will liquefy. I can personally attest to the deliciousness of this bacon. It's yummy. Nothing wrong with it whatsoever.
