I like the way you place the mirapoix veggies in the roasting pan with the turkey to get ahead of the ball on your gravy, but I'm puzzeled at placing the meat thermometer in the turkey breast. The breast is the least of your worries, and 180 degrees upon removal from the oven (with an additional 5-10 degrees for the resting period) sounds like dry turkey territory.
@direfranchement - You're right. The turkey should be cooked to an internal temperature of 170°F (77°C) in the breast and 180°F (82°C) in the thigh. The internal temperature will rise - as you suggested - while the turkey is resting (covered in aluminum foil), so it's best to take it out of the oven about 5 to 10 °F before it reaches the recommended cooking temp.
You need Celery and Sage!!!! I stuff my veggies in the bird no bread stuffing (although my mother does your method). I stuff the bird with celery, onions, carrots and a lot of rubbed sage. Delicious!
