I taste and apply very hot sauces using a simple toothpick. A chopstick is a bit too big and a teaspoon is just insane/stupid.

@jordini99 Hi Jordan, I just think it would be wise to help people understand how hot some of these sauces can really be. Someone without experience might get into deep trouble. Once, I insisted that a restaurant owner taste my Mad Dog Inferno using a toothpick, but he ignored me and used a spoon instead. He yelped like crazy from the pain. It could have turned out worse. I was angry that he would not listen to my advice, but he was on the other side of the counter.

I've had Mad Dog Inferno and Dave's sauces for years. Tasting with more than a drop or 2 is overkill; more and you cannot evaluate the taste and it is tougher to enjoy the experience. I also have a glass of milk handy. (I don't simply drink it, but I let the milk sit in my mouth.) I like the way it warms my lips for a good hour or more.
