I finally found vids on how to prepare a pig's head. My spouse is horrified but they are sold here fresh, for cheap, pretty regularly in my greenmarket. It looks like a huge project and makes charcuterie and more! The tongue, brain, ears, snout, a lot gets used, most of it. Pork is a staple food here in France. I will have to clean and defrost the fridge and freezer. And make a video! Uprated this.
@leetshots When the jowls are sold as cold salad here in France, there is sometimes a hair in there. They have to be torched off but it's really hard to get them all. What is a theakston? I know someone by that name, in Georgia now, I ought to tease him, ha ha!
