  • So, FYI, it's 1 AND 3/4 cups of sugar. Stop worrying about eating sugar. As long as you get all hyper after you eat it, you will burn all the calories by doing so. That is, if you care. Which I don't.

  • Oh my god, these are fucking heavenly. Seriously. Don't ease down on the sugar, just use whatever Nigella says to use (don't understand why anyone would doubt her, anyway). They come out slightly moist (if that's the right word), with a crisp top and I didn't even use the baking soda. Also, I just thwacked a chocolate bar, since I didn't have the fancy chips. THEY ARE DELICIOUS. Trust me, and overall, trust Nigella. She's a godess.

  • wouldn't do that; your muffins will taste like olive oil then. Vegetable oil is mostly used so that you don't taste the oil. Actually; she usually says she just uses oil so that she doesn't have to go melt butter. Which would obviously be heavenly as well.

  • @IreneOrtega24 use baking powder no. 1 :) it consists baking soda & it may be used for most of cakes to be sure they will rise well, but it's artificial. your "baking powder no. 2" it's dryed yeast (type of fungus) extract - when not dried & fresh can be bought in blocks. it is essential to make bread, buns etc. rise.

    so baking powder number 1 is the one u use to bake stuff and the other one it's the one u use to make bread now thye are not by any means the same thing and the second one it's aldo called yeast or something would u mind telling me wich one i have to use to make this recipe...please!!

  • These muffins turned out to be absolutely perfect! I've recently started baking, so I love how easy the recipe is. What I've noticed with most online recipes, there's usually something missing and it never quite turns out the way it's supposed to. But Nigella's chocolate-chip muffins were just terrific, and such a hit at my party that evening. I'm passing it on to everyone I know! Thank you! :)

    P.S. Nigella is so so beautiful. If I were a man, i'd marry her!

  • my family and friends raved about it and it was really easy to make :D it turned out soft and fluffy, so yay! but i added almost 1/2 cup of veg oil, cos ppl said 1/3 was too little. i also reduced flour to 1 and 1/2cup (and i cheated, i used self-raising flour), and increased cocoa powder to 1/4 cup(to hav a rich choc color). contrary to popular belief, the sugar is just right 3/4 cup :)

    my fanforced oven was 180 dg celsius, to 13-15 mins, if it were 20mins they'd be dry :(

  • For those struggling with the cup/weight conversion i would recommend buying a set of actually measuring cups, i got mine for next to nothing at the supermarket (asda) and they've been invaluble. Mine is a set of 4 with one cup, a half cup, a 3rd cup and a quarter. It saves the headache of which tea cup is best to use.

  • @7lys There are recipe websites that offer conversions. According to one, for cake flour or sugar, there should be 128 g to one cup. For bread flour, it would be 136 grams for one cup. Actually, I have tested another method with my measuring cup, and found it to be true. If you need a 'cup' of something, use a standard tea/coffee cup! (not a beaker, a cup, 4.5 /5.0 oz) I assume this is where the measurement of a 'cup' came from in the first place, in the old days?... :-)

  • @Cheryl1166 LOLLOL, I just noticed that she is actually using a coffee cup to measure her flour here in the video! I've done the same thing many times, and whatever I'm making always comes out just fine, so it may not be a perfect scientific method, but it works...

  • Isn't the whole idea of Comfort foods up to someone's preference? Some one told me that Comfort foods have to be rich and HAVE to be a certain style. I always thought that it was something that was up to the individual. I mean I thought it could range to something as rich as a double fudge chocolate muffin to something as simple as a few slice of pears or a salad.

  • Yes, you are right, there is sort of a confusion on the sugar amount to use here, and unfortunately when I went to her site, it is not a recipe listed! However, in the actual book Feast she does use only 3/4 cup sugar, so I think that is correct. I've been wanting to try these, but haven't because I needed a good excuse for them, as they look so rich...Christmas is always a good excuse!

  • And NOW I know why my muffins looked like pancakes. When she says "cup" I think "something I drink coffee in every morning". The thing she is using is more like a bowl, it's much bigger than "cup".

  • Mine were also very bad, they didn't grow and they formed a hole in the middle, they looked like inverted volcanos -_- it has nothing to do with the cup you used... the recipe is really a "turn off".

  • Ah, ok. Well, the mixture will still be very liquid even if you put the right amount of flour. It looks more like cupcake mixture than muffin mixture. The muffin mixture is usually thicker, right? But anyways, try them again and then let us know how they come out :D

  • This was a while ago but I actually own the cups she uses and they're the right sizing. They come in the measuring sizes 1 cup, 3/4 cup, 1/2 cup, 1/4 cup.

It turns out that they come out really bad! :( they look like sad cupcakes on a rainy day. I wasn't even able to take the paper off the muffin. Could have been some mistake I made... but honestly I don't think so :(

  • I am a fan of Nigella lawson and I like her as a real woman and love her recipes and the way she explains stuff BUT I didnt like this recipe lets say 100%. I tried it day b4 yday and it raised very well, everything was perfectly baked but I didnt like the taste of it that day.The next day, thats yersterday I had one for breakfast and it was much better tasting. When she says vegetable oil..what exactly is it?? I live in Italy. is using Peanut,Soya,Sunflower,mixed veg oil the same ?? pls adv.tq

  • 200 deg C for muffins is very normal. anyway all ovens varies a lot and in baking, the temperature is never fixed. so you have to bake accordingly.
