  • That looks really good. My sister made BNSquash soup for Christmas. She mixed in Cilantro, Curry, and topped it with apples soaked in apple juice and yogurt. Really really really good.

  • She also used vegetable stock instead of Chicken stock being that she is a vegetarian. Regardless, it was really good. I want to try it your way though because I am NOT a vegetarian and I like the taste of chicken. This looks really really really good. I can't wait to try it.

  • To make cutting a round squash safer, cut off a slice from one side of it, so that it has a flat surface to rest on. That way, it won't roll and you don't risk cutting yourself.

  • Thanks for the recipe Betty. We have a butternut squash sometimes in a vegetable basket and we have only cut it into cubes and steamed it with other vegetables. Next time we will try your soup recipe as it looks so delicious. :-)

    Yes, if you get tired of steamed butternut squash, just cook it in broth, throw it in the blender, and spice it up for a lovely soup! Thanks for your sweet comment!

  • Looks fantastic, Betty, cant wait to try it. For all our UK friends, here in US we have many kinds of squashes: Butternut squash, Acorn squash, crooked neck squash (yellow kind), straight necked squash (yellow also), zucchini squash, and actually pumpkin is a squash which we just call pumpkin like you do. Usually when we say "squash" we mean the yellow variety we love to slice, bread it, and fry..southern tradition here. Hope that helps. Thanks for the recipe, Betty---Angie

  • Oh so that's what squash is in the US! Who would've thought! How cute! Just butternut pumpkin to us over here. So, what do you call just regular large pumpkins then?...just pumpkins, or do you call them a type of 'squash' too?

    Whatever you call it though, looks delicious! A great soup I'll have to try! I was expecting a different type of squash (the yellow veggies we call squash) soup though! A must-cook in winter...or just roast pumpkin as is a staple here with a big Sunday roast.

  • Butternut squash matures along with pumpkins. We get our yellow squash during the summer with all of our typical green beans, corn, tomatoes, etc. This squash is great for comforting winter soups!

  • I love butternut squash soup. I have a recipe that has curry in it and you roast the butternut squash. It is served with a lime crema. I got it from the Food Network, Robin Miller a long time ago and it is delicious. I need to try you recipe!
