Once your done cutting out the back bone of the turkey, turn over the turkey and if it is possible, press down on the breast bone to break it. This will make the turkey lay flat. I have done it with chicken. I would like to do it with a turkey.

yeah, it looks goofy no matter how you remove the spine. I use the sharpest knife I can find and cut through the ribs, Still looks gory.
