  • @trixiefly11 Maybe because you got too much soy and vinegar that concentrates as you simmer the adobo down. My past attempts had no water and made my adobo very salty. Also depends on the type of soy and vinegar you use. There's a lot of interesting variations of adobo you can achieve by messing with those 2 ingredients.

  • Thanks for sharing your Adobo recipe. Here's mine:

    3 Boneless chicken breasts (cubed)

    Brocoli

    Steamed white rice

    Adobo sauce: 3 tlbsp of corn starch 1 cup of soy sauce (add water to make more)

    I had the ultimate test for my recipe when I took it for a potluck dinner at the USPS. A lot of Filipinos work there and they devoured it. Yay me!

  • Does it matter what soy sauce you use? I've been told to use only filipino soy sauce?thank you!!

  • @amys1708 There are hardcore purists that believe that Filipino soy sauce is the only sauce you should use, but I don't think that. I have used all different kinds of soy for this dish, as well as different kinds of vinegar. In fact, I knew a woman that made her adobo with low sodium soy and red wine vinegar. Turned out awesome.

  • You can try adding boiled eggs too, aside from potatoes and carrots :D

    for me fresh garlic, bay leaves and fresh peppercorns are a must must must.

    just eyeballing it to me looked like 3 tbspn vinigar and 6 of soy.

    I like to add also, canned pineapple and potato. YUM !
