what exactly were the measurements of the ingredients; I watch Emiril Lagazi on the tv; how do you spell miriqua?? I thought onion, carrots, celery were the miriqua?
I haven't made a roux in 13 years, and then not the dark skating-the-edge-between-good-and-burnt kind used in creole foods. Then I married someone New Orleans. Thanks for the great refresher!
@wilson7869 So let me get this straight.. what your original statement meant to sound like was: "Wow Americans, learn how to make a Roux correctly!", because it just sounds like an ignorant remark the way you originally stated it. Hence why I thought your statement had to be a joke :) Also, I thought this was an informative video and it helped me ensure I was making a dish correctly a few months ago. Try to be a little more open-minded, you might surprise yourself. Good luck!

@melammaru Try and make sense..

@wilson7869 This is a vague request... try looking up Roux in a dictionary and check the origin. Does that make sense to you? :P

@melammaru Again, try and make sense. State where I had said a roux isn't French LOL.

@melammaru Is my exact reaction.. You're insinuating I said a Roux is not French. Again, please state this.

I prefer a butter-based roux than a vegetable oil one. Still looks good though.

Looks wonderful. I like using a stainless steel spatula though. Preferences preferences. ha. Nice roux.
