  • @kajira4master Yeah, but greens are so bitter you need some salt. At least some low sodium chicken broth. Let me know.

  • I tried cooking the greens this way and let me tell you, these were the best greens I ever had!! I won't go back to cooking greens the way I did previously. Thanks Dave for this recipe. I have shared your video with a lot of my friends.

  • Thank you for leaving the damn greens alone. when i say "alone" , I mean not adding tons of crap to it to make it taste like something else. greens, salt, pepper garlic, and onion. ham-hock or smoked turkey. good job buddy. btw i love that better than bouillon . its great i have been use'n it for a bout a year now. in everything lol

    I LOVE this video! I have always wanted to know how to make southern greens. I have a quick question. I see that you use the "Better Than Bouillon" seasoning, but I was wondering if you have ever used chicken stock before? I saw it on the Food Network and I was thinking about using Emeril's natural chicken stock. Do you think the "Better Than Bouillon" will taste better than that? Thank you so much in advance for your help. I appreciate any advise you could give me. Have a great day!!

  • Hey! Thanks for the nice words!

    Chicken Base is chicken stock. You can not buy chicken stock and it is too much of a pain to make all the time. I do make it sometimes, but not a lot. I dont know about Emerils natural chicken stock, but all other chicken broth/stock that is in a can or box is just Bouillon in water. The chicken base is real chicken stock that is cooked down and just needs to be added to water. It is great and easy!

  • Hey endlessrskies, I like the cheap onions. LOL I usually use the white or yellow onions. I preferr vadalia onions. I red onion for some things because they are sweet. I thye ad color in soups and stews.

  • Dave, please do a video abt your organic gardening. We plant a small organic garden (lettuce in a planter + tomatoes, peppers, collard greens, etc. in the ground). But, my collard greens are full of holes each year(bugs love 'em!). I tried 2 years & then gave up & just buy them in the store. How do you deal with the pests?

  • Hey kdw4jc, Yeah the bugs are a pest. The collards are best in January. I usually plant in Sept and get two harvest out of them. So the cold keeps the pest away all except for the snails. I have to go out every morning and pull off the snails. I just mash the snells into the dirt. They are very small. I used to have a video of my garden here on youtube, but nobody watched it so I took it down?

  • Dave, I am so glad to see someone REALLY wash greens. I mix turnip, mustard & collards & cook with a smoked turkey wing or ham & serve it with vinegar, hot sauce, sliced onions & tomato slices. Yu-um!

  • I like the mixed greens too. Lst year I grew a tender green that was like a mustard and turnip in one! It was wonderful. The lady told me that the seeds I bought were tender greens?

  • I think all of your videos are great, but you could make them even better by putting a full list of ingredients on the side where it says "about this video" on the top right side. It makes it so we can get the information all in one place so we can spend more time making your great food, and less time searching. :)

  • You know, I've heard of ppl doing that, but I've never done it myself. My Uncle tells me he puts the leaves (whole and unstemmed) in the washer. He says he starts the washer on the rinse cycle and then he lets it spin em dry. LOL I thought he was crazy until now!

  • Hi! I've been watching your cooking and I find myself smiling with delight all the time! I'm Swedish and I didn't recognise what that vegetable was so I looked it up. If anyone else is as ignorant as me I got some translations to collard greens:

    Swedish - grönkål

    German - Grünkohl

    French - chou frisi

  • Hahahahah.. I have the accent, but can't cook southern worth a lick. First time I tried, I did not scrub em, they about broke my hubs teeth. Second time, someone told me to wash em in the wash machine.. Hub had green socks and undies for the next month!
