@frugalnanny Hey Frugalnanny! I believe my change of diet was the catalyst for my weight loss! I did do a small amount of aerobic and yoga exercise with the wii fit during my transformation. I've done regular exercise before going raw and it didn't have anywhere near the effects it had as when I began adding so much raw foods to my diet! Soaking the nuts and seeds removes enzyme inhibitors in them that could cause digestive issues, it also begins the germination process which increases the availability of the nutrients in them! They also taste a lot better after they've been soaked as it removes the bitter tanic acids and compounds found in many tree nuts. So it's a win win win situation! :0)

It's not 100% neccesary to soak the nuts and seeds beforehand. But, it does make them a lot easier to digest! Nuts and seeds contain enzyme inhibitors. These enzyme inhibitors prevent the seeds from sprouting until there is enough moisture to support the growing seedling. This is cool but, they also have another role, they prevent the seed from being digested!
This allows the seeds to be eaten by animals and if they're not chewed they will pass through the animal and be able to grow in their new location. This function can effect us because these digestive inhibiting effects can mean gas, bloating and indigestion for us. Kinda like consuming "negative enzymes". Soaking releases these inhibitors and begins the seeds germination process, making it more enzyme rich and easier to digest!
You can dehydrate these soaked seeds to get them crunchy again for recipes that require crunchy nuts or seeds such as these energy bars.
If you don't have a dehydrator there are inexpensive models out there with a fully functioning thermostat such as the Nesco brand (check out amazon) .
These bars are still awesome without soaking and dehydrating but they'l sit a lil' heavier on ya! :0)

Thanks! I heard recently at Steve Meyorwitz's sprout workshop that soaking nuts ( or seeds ) too long leads to fermentation. I agree on the finishing them sooner, if you have the time to make things more often or can use them at their peak freshness then thats always the best!
Hey Plasmagic! I soaked the nuts for about 6-8 hours to get rid of the tannic acids and the seeds about 4-6 hours, then dehydrated them until crunchy again! The bars will keep in the fridge for about 7 days. Thanks for the question! Peace~ Rory :0)
i think u have the right timing, some raw foodist soak them overnight or like 12 hours, u will notice the oil is soaked out into the water. i norally try finish earlier 2-3 days cause the nuts n seeds doesnt have the protective layer
I have'nt tried that ...sounds like it might cut some prep-time ,but I don't think the nuts would get as finely ground because the date "mush" seems to gum up the works quite a bit..maybe if ya had a stronger food processor you could grind the nuts first , remove 'em,mush the dates then re-add the nuts and process them all together ...but, my food processor starts to warm up the dates a lil' bit as it's grinding them so I would be concerned about destroying enzymes.
Great stuff. Love the yin yang teacups. Now I know how to make those expensive Larabars! My favorite is the comprised only of dates, cashews, and cinnamon. YUM!!!

they looks easy and tasty. I bet they are also good in the dehydrator. i wonder if the bread kneader attachment on a table mixer would help combine the ingredients or just make a mess. Maybe a large food processor would work. I like how you simplified it to say 1 part dates to 3 parts dry ingredients so you can customize the recipe.

You are awesome! I have been looking for a good raw energy bar recipe. I'm not raw myself but and trying to go high raw in my diet.
Question: Do I HAVE to soak the nuts and seeds? If so, why? Would it be bad if I didn't?
