Galactica is faster, stronger, better captain, better crew, better effects, and more realistic. It can take a fighting without a console exploding in someone's face, can the same be said about the Enterprise?
Kirk might know how to fight plastic dinosaurs with slow reflexes, but Adama would FTL jump his Battlestar right in front of the Enterprise with a heavy turret firing solution on its command bridge while sending a Viper squadron on its back crippling the warpdrive.

The point is we determien the victor based on how well they did against their own threats in their own universes. Form what's shown kirk did better.

He has beaten a machine that could fight for hours without breaking a sweat, he has we shot and wounded more time then i can count, his best friend turned out to be a cylon and both the womens he loved died and his ship was old but he still mannage to keep his sanity and honor despite everything.
