Ahhh, I am no expert on Arabic bread my self... but I certainly never saw one like that before. So the cook has, what I am assuming is, an extremely hot stove and the cook just simply dabs the dough onto the stove and it "catches" and the cook continues until the entire stove is covered and then just peels it off? So the dough it self is not cooked as a loaf at all then? This is more like a pancake than a bread?
