i'm not sure if all the steps were shown or if i missed something major. but was the okro put in just as it was shown sliced in the pan? how exactly was the okro treated to make it draw in the stew? and is that what changed the colour from the reddish to the greenish colour? i really want to make this but want to be clear on the steps. it looks yummy.
@nyboakye: there R 3 things to make okro draw. 1. A kind of leaf we have back home 2.A stone like substance called "Kanwe" which can be found in most african stores that major in Ghanaian products. and 3.The most basic that can be found in practically any grocery store or supermarket called "Baking Soda". These R used during the time u boil the okro on its own in a pot filled with just about a cup or 2 of water depending on how much okro u are making.
@One4theworld Great!! Thanks a lot for the info. I hope i don't mess it up and that it turns out perfect. You know some people drop in some green leafs - do you happen to know what those leafs are called? Also, is the baking soda the same ingredient that we use to give waakye the brown colour?
@nyboakye: Im about to ask good ole mama right this minute about the name of the .. hold on..lol, yea, its actually this nigerian leaves called "palava' u can boil the palava separately n when the stew is all done u just take some n add to your served okro stew. I havn't had much time, but i'll try to make a cpl more videos on some of these dishes.
@nyboakye and yes it is just the regular baking soda that u get at the store, they're usually under a dollar, im not surprised if its more these days, and good thing with baking soda it can be in the fridge for a yr or so without a problem. The minute u put the baking soda in which i may put just about 1 heaping Teaspn for a full med-large pot of okro. yep, u dont need much of it at all. INFACT, if u put too much baking soda, expect your stomach to be conversating with u afterwards (^_^)
I'm looking for a dish from Ghana that includes Spinach and Sardines, its like a stew. Do you happen to have a recipe for Spinach and Sardines? I've been looking for this recipe for years. Thank you ☺
@luvingg: Well u start off making a small bit of stew but with this you use red oil (palm oil), chop some onions don't use much tomatoes and some tomato paste just like we normally make our stew except less tomatoes...boil spinach add you salt ingredients to ur stew and then add can of the sardines the big can of geisha sardines not the titus flat 4 piece sardines we use with pepper. let sit n voila. easier said than done, so 1 day when i am cooking this i'll hopefully remember to video it.
