Skin imparts undesirable flavour? What? Most of the fish taste is IN the skin, nothing better than nice and crisp skin unless the fish is old. No need for a sharp fillet knife? Yeah just use that dull knife to rip that poor fish apart. To prevent it from twisting with skin on, just drop it in the pan and press down on it for a couple seconds while it sets or slice the skin. Why cut it into lots of small pieces? They will be dry and tasteless. Poor advice all around.
it would appear everyone is quite unimpressed with this video. i thought it was pretty good. thats an odd skinning technique though. i prefer to just skin the whole thing at once and then cut the fish into pieces. i also like to beer batter the fish and deep fry it like a total fatass. dont forget the lemon. i'm going to stop typing now.
one last thing..the skin will come off during the cooking process with no effort. Just start cooking at hight heat with the skin facing down. Flip the fish to cook on both sides and gently remove the skin. That's it.
I disagree. A sharp knife IS fundamental as you can see from the video you are DESTROYING that fish. plus the skin holds all the omega3 fats that are good for you and to be cooked with the fish. They also allow to cook the fish without adding any extra oil or butter whatsoever..and the taste is just fine

one last thing..the skin will come off during the cooking process with no effort. Just start cooking at hight heat with the skin facing down. Flip the fish to cook on both sides and gently remove the skin. That's it.
