Would someone who is in the know correct me if I'm wrong? (any Orthodox Jews present?) This recipe uses egg and schmaltz (chicken fat). Isn't that combo unkosher? After all, eating any dairy with meat is unkosher; can you eat egg with chicken?

Uhhh if you cook it in the chicken soup that adds more flavor. And you make more soup. Add more water and a bit more vegetables. A decent sized chicken is good enough to fill up an entire pot full of water. So be generous with the soup.
