I think Harry Potter skips the map so that things can be introduced as they become necessary without people anticipating them from the map. There's also some kind of in-universe rule that the school can't be mapped, so maybe she just intended consistency with that.
@GoldDraconian J.K Rowling has actually released a map of Hagwarts after all the books were made and some of the films . I think she waited so she could make them up as she went along rather than spend ages planing before hand

Books like Guardians of Ga'Hoole, The Hobbit,... they used this thing :) if Harry Potter had it it would be real cool but still 5/5
