  • Ancient garum is fish, salt, and water fermented in the sun for days, weeks. It's basically our modern day Vietnamese fish sauce. If you want to see a closer approximation of ancient garum, watch BIZARRE FOODS - VIETMAN 5/6. btw - it's good. It's like what soy sauce is to the Chinese.

  • Call it whatever you like however this is absolutely, without question, not garum. It just isn't. Sorry bud.

  • I am not sure this was strictly garum, since that condiment was done using fish intestines. This may be very tasty and look dark and superficially like garum, but I would not strictly call it ancient Roman garum.

  • @jorgedug You are correct? Garum or liquamin or what have you is more of a liquid than a dip as shown here. Eggs would not be used...dunno about olives either. Definitely no Brandy, though it is distilled wine and the ancient Romans couldn't get enough of it, distilled spirits and liquor did not exist till maybe the middle ages. Looks good though. If anyone is interested in other ancient recipes check out Apicius’ ‘The Roman Cookery’.
