@jihadacadien - Yes, more sugar than I realized to be honest. You don't think of 4 cups of sugar being so...well, uh, large. But I did post a comment to GettingThereGreen about a no sugar recipe that uses cloves, nutmeg, and cinnamon more liberally to compensate.
@GettingThereGreen Absolutely. It is odd. We don't consume much sugar at all and have even switched over to Agave for our tea and coffee. But for whatever reason, we leave some recipes alone. However, I did a little research and you can totally make this without sugar. Try using 3 cups apple cider or apple juice, 1 teaspoon lemon juice, 1 tablespoon cinnamon, 1/4 teaspoon ground cloves, and 1/2 teaspoon nutmeg. You should get about the same results without sacrificing the flavor!

MMMM! Apple Butter! I grew up on this. Fried biscuits and apple butter. One of my favorites for holiday dinners.

@thekuan It's basically a deep pot filled with water that is brought to a boil to add a pressure seal to your jars/cans.
