Yes, it is wasteful, but that's how it's generally done in restaurants to speed up the thawing process. Just don't have the water on full blast, a trickle is enough.
@wymanthescienceman yes we are doing that but were hiding to our chef and to health local govt. here in middle east...last time the local govt.say if the meat item was frozen...you can cook it directly even the meat was frozen...seriously its true....wtf!!!!
