Then I wasn't sure about how the herbs would go with the fruit and how the fruit would go with the onion. I'll let you know how it turns out. I am following Alton Brown's roasting method and that guy is The Man!
This is my plan. I just made a brine out of 1 gallon of apple cider, 1 gallon of water, 1 cup salt, 1 cup brown sugar, pepper corns, cloves, bay leaves and some whole garlic cloves. I am going to throw the turkey in at midnight so I can pull it out at noon tomorrow. Before I roast it I'm going to fill the cavity with fresh rosemary, sage, thyme, half an onion, quartered apple and a quartered orange. Any suggestions of what to add or more importantly, what of those things NOT to add.

@kagomeshygirl Hi there! I don't think you need to inject a brined turkey as the meat is already quite moist. I guess if you wanted to it would be fine. As for the beer, wine or apple juice - yes! One person said to brine the turkey for 72 hours, another said for no longer than 12 hours. Some people say cook it till its 165, you say 175 and one person said 161. I hear breast side down, breast side up, start it at 500 for 30 minutes and then 350 for another 1.5 - 2.5 hours depending on size, cover it, don't cover it ect ect ect... Im so confused.

@lusher00 Hi Lusher, I have always had great luck w/ Mary Ann's recipes & this turkey looks amazing too! Here's a hint to add to your 'turkey knowledge"...When you take a turkey out of the oven at (say for example) 165, it continues to cook for 15 mins. For those 15 minutes it rises in temp at the rate of 1 degree per minute. So you will be actually eating your bird at 180 degrees...which is fine. & Holding it for 40 mins like Mary Ann did give the cook a chance to use her oven for other things!
