That's because they are improvising, which is very common in Jazz. Also, they use a lot of scat. In vocal jazz, scat singing is vocal improvisation with wordless vocables, nonsense syllables or without words at all. Scat singing gives singers the ability to sing improvised melodies and rhythms, to create the equivalent of an instrumental solo using their voice. That's what Satchmo and Danny are doing.

I suspect that, like much of Kaye's material, the extra verses were written by Kaye's wife Sylvia Fine.
