  • Well, i was working in a Kitchen in Wales for the summer, and we made fondant every day.

    I wanted to do it at home too, but then In noticed it's waste.

    In a restaurantkitchen you can use it for mash, and at home i never know what to do, but it's up to yourself to decide if you wnat to make them lokking really good, or maybe do don't cut away that much.

  • What about adding beurre manie to that stock/thyme for a sauce. Blasphemy? These "scalloped" potatoes look great, though. Could do a Coquille St. Jacques preparation also for a nice optical illusion type dish. Thanks.

  • Can I say that you can cook the whole potato with no waste by cutting them in half and treating them exactly the same way. Scalloped in this manner is purely for presentation. And you can add the Rosemary much sooner too.

  • @padf0ot This is the last time im going to comment on these waste questions...just because i did not use it in the video does not mean i did not use it at all. For the last time, you can use it for mashed potatoes or hash-browns or a number of things. If you choose to throw the other pieces away that is really up to you.

  • Yum, I used to cook a similar accompaniment but with "Rounds" of butternut squash.

    Orange juice, white wine, butter and plenty of salt. Then cooked in the oven. Once cooked, removed from the cooking juices and cool. Refrigerate to firm up, then roasted in a smoking pan with a little tyme. Served with a beautiful piece of Beef.

  • fondant = cooked in stock (fond), nothing to do with their own juices (which potatoes don't have) maybe you're confusing the term with confit?

    Anyway, nicer fondant than Ramsay's video on here

  • @andeegreen Potatoes have juice... their juice is also used for natural remedies....Confit is preserving a meat in fat...

  • @stevescooking I believe Chef Steve didn't waste the remaining potato. You can save it if you're planning to make mashed potatoes. Submerge the potato flesh with water so it won't discolor. Right? =D

  • @hevox Yes, these potatoes go with anything really....you could do a nice red wine reduction sauce to go with some beef, Romesco sauce with just the potatoes to dip, a nice creamy parsley sauce to go with some nice white fish...etc. hope this helps

  • Dude this is a great tutorial, well presented, clear and the ambient (although slightly softcore porn) music in the background wasn't overly distracted. I cooked these for my family and girlfriend last night and they went down a treat, kudos to you mate!

  • @fiend7777 Anything you want...Boil them to make mashed potato (depending on how many potatoes your using)...you can roast them, make Galettes, Potato hash, Stews etc. :)
