The method you use to pave stone all depends on what the customer wants. My grandfather would pave just like this (eyeballing it) only if the customer wanted a earthy more rustic look to there path. Now if the customer wanted a straight more rigid look, then he would use a line, level, and all of his precision tools.
My point is, the customer is the boss. You (the installer) must use the method that best gives the customer what they want.
This dude is cool! The project was well done and will last a long time. The only thing he could have done to make it last longer was to add landscape cloth. It's not perfectly level but it looks more awesome that way. That's a beautiful garden too. This is the first video i have seen from this channel and i love it so far. subbed

@Katlunazul its sand, not cement; he even said that much.... the whole basis of your complaint is invalid since it's only dirt it will wash right off.

I would not give my work to somebody that does not have money to buy a trowel, a float and a wheelbarrow with a working wheel........
Now, money aside. This is the most sloppy job I have seen. Do you see what happens on 7:30? He spreads the concrete with his boots!!!
Result? 8:45. Pavers full of cement on top, which will leave a white residue.
Yeah, you can clean them, but is like buying a new car and pissing on it just because you can wash it.
