Gus'es Nephew owns the Crown Point restaurant in Charlotte and let me tell you, thats some great fried squash. Crisp and not to much fry so you can taste the squash.

Love fried squash. Peel them and use a deep fryer. Squash will be more tender with no skin and will be faster and less messy in a deep fryer. Yum, Yum!!

Again, good way to use up the 2908902 squash growing in a garden, but frying it kind of takes some of the 'healthy' out of it doesn't it? I guess if you only eat it like this once and awhile it won't hurt you.
Sure looks good! I just fried up a little scallop squash for a snack. I always use panko and an egg wash. The salt and bag-o-corn meal looks like a good idea.
I have never had fried squash like these before. I have made squash in unions and oil though, but never tried it with a batter before. I'll have to try this recipe. It reminds me of fried green tomatoes there made the same way I think.

I really liked the recipe.
the reason she adds salt is to draw some of the moisture from the squash so they will coat with the flour.
