It's adamant. And with 4 attacking moves, you'd think that would be good. :\ The odd thing is, though, it was the main one I used to beat all the previous trainers.
I had a lot of trouble too. I think the key is to find a nature that benefits the moves the Pokemon has. Like, if it has a +Defense nature, like Impish or something, give it moves like toxic or protect, and if it has a +Attack nature, like Adamant, give it mostly physical attack moves.
Other than that, it's basically just luck, really.

Adamant, 334 HP, 372 Atk, 227 Def, 202 Sp. Atk, 214 Sp. Def, 179 Spe.

What nature was your Salamence? Maybe it's nature made it not do anything.
