Great questions, however I must confess my lack of thoroughness...
1) The tea temperature wasn't controlled (I basically did it all quickly in a couple of lunch breaks)
2 & 3) No, I didn't test other brands or the bourbon, because I ran out of beakers, money and time!
I've had quite a few suggestions for how it could be improved, but your point of about the biscuit breaking on the way to the mouth is good. How could that be tested in a controlled and scientific way?
Good test but I have some questions;
1. Was the tea temperature controlled?
2. Did you do test other brands of the same biscuit?
3. Why did you not test the bourbon biscuit?
Also most of the time the biscuit breaks during the lift to the mouth and this is what people really care about.
