    I'm a extremely long term resident here in Japan who is well connected with the industry.. What you are saying is a not actually correct. Many of the markets like the one shown here allow tourists. I occasionally still take pictures myself. However there was an actual incident where that a few drunk fellow (to my shame) Australians ...went in and were kissing the fish... Since then those markets in the upper area are hesitant to allow foreigners in

  • Fun to watch, they seem so careful when cutting. I know some tuna is either extinct or close to it, is it Yellow Fin? Don't some big ones sell for loke 12K US or am I wrong, wing wong.

  • Bluefin will be extinct within a few years most likely. Lack of enthusiasm to conserve Bluefin and other global fish stocks has spelled doom for these majestic and beautiful creatures. Unless we change now, there won't be Bluefin in the near future. We simply can't keep taking them from the sea. It's not sustainable anymore.

  • I love Japan and particularly Japanese people but the way we consume fish unsustainable is noting less than murdering our nature... Tuna will be banned in Europe in 2012. I hope people will have broader concept of understanding when it comes to consuming.

  • i read the caption caption about them not wanting the fish touched for sanitary reasons that i would agree with but letting them lay and dragging them accross the floor doesnt look to sanitary either

    The new market yard has been polluted by toxin. After 2012 you can't eat sushi in Tokyo.

  • Japan is full of irony and contradictions. Look at it this way, if you had a shiny new black Porsche, would you mind strangers touching it and putting their fingerprints on it?

  • @photojpn I think I'd mind them wiping their feet on it a little more. A car doesn't quite work as a metaphor because it does actually roll, I'd mind someone touching my toothbrush, but I'd be more upset if they slid it around on the floor.

    But, the floor is dirty, with dirt and shoe scum, which hopefully can be washed off the skin of the tuna or is discarded when the tuna is skinned.

    The human hand has oils and bacteria. and disease. could that be the answer?

  • Outside of frozen fish gets trimmed before defrosting. Those things are frozen solid, hence that guy using industrial saw to cut it. Also frozen fish is different grade, look at the care they take with fresh fillet, wipe the blade, couple different knifes, no throwing.

  • It's not jap. It's Japanese, jp, jpn, or jpnse. "Jap" is derogatory.

  • @photojpn I think it depends on where you are? Here (in Vancouver, Canada) even all our Japanese teachers (both university and high school level) say Jap class or Jap store. Japanese is abbreviated as Jap here and it's not derogatory.

  • It's where the gill plate used to be. they removed it and took out the gills, hence a giant hole encrusted with ice.
