  • @amandarasul The Medjool dates I use are soft enough. If your dates are hard, then yes, soak them :)

  • @starfaery You can use a hand blender with nut butter instead of nuts, but no, other than that...

  • You should put almonds in water over night so it's soft and easier to blend in and you are able to take out the skin of the almonds so it would be less bitter.

  • @CDdisk4life You can certainly do this, but many people do not have the time and inclination to do this. I teach what is quick and easy to do for the average person.

  • @MrLeooreo I could redo this video except I don't want to put people off who already think raw food is too time consuming or complicated. Which is why I filmed it the way I filmed it.

  • hi karen, i tried the almond milk in a normal humble blender and it was fine, stayed in the fridge for 4-5 days without losing its taste - so thanks for that. just one Q - what do i do with the pulp? i dont have a dehydrator, i tried using it to make chocolate cookies but had to give them to the birds as no one wanted them! seems a shame to throw all that pulp away.

  • @safi456 You could dehydrate it and turn it into almond flour which could be used at any point in the future if you get it dry enough. You can also add to crusts, burgers and cookies as you say.

  • hi karen, nice vid. i followed ur instructions to the letter (except that i soaked the nuts overnight, and then washed them, and used fresh water to blitz them) and initially it tasted fine, but by the next day the whole mix had gone sour, including the almond pulp! had to throw the whole lot away, and it wasnt cheap! any ideas what went wrong? ive used almonds from the same bag to make other raw foods and they were fine, so not sure what it could be.

  • @safi456 I think I mentioned in the video that it only is good for a day at the most, so this would be why! Bottom line: Only make what you're going to drink over the course of one day and refridgerate during this time.

  • Great video Karen, will be trying this out today. I wondered, can you use this milk as a substitute for cows milk in recipes. I'm trying to go 50% raw, and avoid dairy, but I do like creamy soups and pasta sauces and not sure of the best replacement for dairy ingredients like milk & cream.

  • @RachO113 You can use this in some recipes but actually the best dairy replacement is cashew milk. Having said that, you have to take it on a recipe by recipe basis as not all of them work well. Good luck!

  • My very good friend is vegan and loves almond milk but as a college student in can get a bit expensive! I plan on making a batch for her for a house warming present in hopes she will begin making her own. thank you!

  • The best dates to use are Jujube dates known as Ziziphus which will really help your Spleen function thus aiding your digestion and blood. Look for Da Zao or Red Chinese dates in Chinese markets!

  • Wow some expert, doesn't even understand the nutricional value of soaking nuts.

  • @tblaxxable This expert has explained why she doesn't used soaked nuts in this demo about 20 times already. Her expertise is in helping make raw food easy, simple and fun, so that *anyone* and *everyone* can do it and not put it off or not do it all because they haven't soaked any nuts.

  • @karenknowler I agree with @tblaxxable. The almonds need to be soaked overnight to remove the enzyme inhibitors that cause improper digestion. Just soak overnight, drain the water, then continue as she describes in the video above. If you're from California, you need to order your almonds from out-of-state because California almonds are pasteurized.

  • @pameluh They don't need to be soaked, but they can be soaked. Soaking is preferable no doubt, but not mandatory.

  • You don't soak the almonds for 24 hours? If you don't, you will still have the enzyme inhibitors .... always soak the almonds first

  • I actually started making my almond milk since I tried the organic almond milk out the store (which is gross!) I will always make my almond milk I also mix Hazlenuts with the almond nuts, WOW the flavor is wonderful.

  • @578671 It would totally work but tap water is not great for drinking, hence why people filter/distil/ionize/buy etc., their water. But if it's all you have then use it : )

  • The almonds should be soaked overnight and rinsed thoroughly to remove the TOXINS from the nut skins - before you blend and filter.

  • @alexnason I've always wondered what "toxins" people are referring to. Especially since almonds can be eaten raw, that statement never made sense to me. If you have information on that would you be kind enough to forward it to me. I understand the enzyme inhibiting properties of the almond skin (still not a toxin though), but apart from that, what toxins are present? Personally I soak mine when making milk because they blend better (I don't have a high power blender)

Soaking the almonds overnight helps aid digestion and in the morning the skins are easily removed (of course, you want to do this before you put them in the blender).

  • Pardon my ignorance, but is there any protein left after you strain the nut milk? Or is the pulp just fiber? Would you say this is a good source of protein? I'm vegan and trying to build muscle. How long will the nut milk last if refrigerated? Have you tried mixing the nut milk with fruits for a fruit smoothie?

  • @icebud Yes there is protein left, but just how much I could not say. Hemp milk is probably a better bet for you than almond milk, although mixing it up (not in the same glass!) would be better. Will last 1-2 days in fridge, you can also freeze it. You can mix with fruit yes, and it's too rich for me but might be great for you.

  • Thanks for the recipe. I have just made some and it tastes really great. Of course raw almonds here in the UK can be a bit of a problem on the high street/supermarkets but nothing a quick google cant sort out from a specialist retailer.

    One question though, do you have any sort of nutritional break down for this milk i.e. grams of fat/protein and calories and carbs?

  • @ravx247 Hi! Actually, getting raw almonds via supermarkets in the UK is actually very easy, most if not all are raw. Almonds are the easiest nut to find raw as they shell so easily. I don't have the nutritional breakdown for this recipe, but if you went to fitday.com I think you could figure it out from there...

    Wow I didn’t realise that! I thought they heated to de-shell etc.

    Anyway I have fitday on my PC which is brilliant however it doesn’t have almond milk in its food listings. I even went online to see if their website had updated but again it’s not there. So if you have a breakdown which you could post it would be much appreciated.

  • Karen: Nothing against you whatsoever...I have just made mylks before and seen tons of recipes and personally, I would rather stretch the nuts because they are pretty pricey, as you well know. And the richness of the mylk is not sacrificed. This is a give and take of ideas, I hope. No harm, no foul:)

  • Is the nut to water ratio a bit low? That might be a little thick! Oh, and thanks for the American measurements. The metric never caught on here, LOL, although we have liters. They taught us the Metric System when I was a kid in the '70s...

  • I'm working on a healthy diet and want to try this almond milk concoction as a replacement to cows milk. Different sources though state that the almonds are high in fat and I wanted to know if this would interfere with my diet I am on? I am transitioning to a vegetarian lifestyle and although I hear the nutritional benefits of almonds, I want to make sure it's not going to make me balloon up in size or what not! I know this might be a silly question...but I really wanted to know =)

  • @TheMakeOrBreak If you strain this you're not drinking the pulp which contains a lot of the fat. Besides you're not going to drink masses of this per day, and if the rest of your diet is high in fruits and veggies you shouldn't have too much to worry about.

  • Would a regular, conventional blender be just as effective as a vitamix blender? Also, I've heard that almonds can cause breakouts (acne) because of the high oil content, is this true? One last question, can the nut milk bag be reused? If so, how many times?

  • @icebud Yes a regular blender can work but it will not be as good. It may struggle to totally break down the nuts as well. Be careful not to fill it too much as it will make it even less effective, but... it will still work and still be great with a regular blender! As for the oil, not likely, you're more likely to get it via cheese and dairy than nuts. The nut milk bag can be re-used forever.

  • Do you soak your almonds first? You didn't mention it in the video so I thought that I would let you know that it's better to do that. The reason is because raw almonds have an enzyme inhibitor that makes it hard to digest. Soaking them for 24-48 hours gets rid of that. They also taste better!

  • @skrinklebaby It's a nut milk bag which you can buy online - just google. Or you can use a fine sieve.

  • I usually soak them over night and use the People's Press with the Vita-mixer. Soaking the almonds releases the enzyme inhibitors. The nut becomes a sprout. Cool. Alive. We purchase our raw almonds through the Green Smoothie Girl for $3.00 a pound.

  • @PadreSandia Nope, I don't generally soak them. This is one the things that puts people off raw food thinking they have to do soak everything before they use it. Not true. Sure it's better and ideal, but it's not imperative. People can get to that in time if they want to : )

  • what do you do with the left over pulp? I just made some and stuck the pulp in my frige! I'd like to use it as not to waste it!

  • You can dehydrate it and use as almond flour or you can use moist and process with veggies, herbs etc to create burgers. Failing that compost!

  • i use the left overs in green smoothies as a thickener. Its a great way to slow down the digestion of the smoothies and to add a bit of fat and protein :)

  • There are *many* fabulous looking raw food people! The ones who don't look so hot have usually gone extreme or wrong in some way - there are many ways to eat raw. For myself I teach people to find the way that is right for them - very important - and I eat the way that is right for me.

  • Best bet is to buy the book "Raw Food, Real World" - amazon has it - it's excellent for recipes like this.

  • The almonds are soaked for six to eight hours to remove chemicals and pesticides. Once you drain the water rinse the almonds off before making your milk shake.

  • @BTC141 how does soaking remove pesticides or chemicals? Does the soaking drown the poison? lol. Anyway..you really dont have to worry about that stuff with almonds, and you can always buy them in the shell if youre really cautious
