The perfect steak is Kobe/Wagyu NY Strip with a marbling scale of 12/12. This steak Heston is trying to display is nothing compared to what I just said.
haha!!! my mates dad tried this. apparently about after eating it he span out and had to have a lie down. He thought it was coz he was so overwhelmed by 20 odd hours of intense beef aroma in his house, finally ate it and it finished him off
Well everything he does ; he has a reason to it and informs us why hes doing it;with a science behind it as well. Its good that there is someone like Heston with all his passion and energy.
And yes if you want to have Peking Duck and you can afford it then goto HongKong. I would if I had the cash. After all lets see how the Chinese do it
It's not obscenely rare. It's rare. I might prefer more of a medium rare to a rare, but with the quality of beef that this guy has access to, you wouldn't mind how rare it was when you tasted it. Betchya.
@RuudJH This isn't really a show about what you should do at home. This is really more a show for foodies who like watching the extent that this obsessive maniac will go to find perfection. He goes to Hong Kong to find perfect Peking Duck. I doubt he expects everyone to.

@jazzierocks1999 That's the point of cooking it at such a low temperature, the meat gradually rises to that temperature so it doesn't overcook.
