I didn't make the game or the updated rosters, but my guess is that they did that because every team in Tecmo Bowl runs a 3-4 and the OLB are the best place to have a good player in the game.

Also, the positions didn't translate in the original. Jerome Brown, for instance was a MLB in the game, but a DT in real life.
