    I really hope you will answer this question i have. Is it possible if i substitute Marsala Wine (1cup) with the same amount of brandy? My dad says that Brandy has about 40% alcohol? The other recipes i have found includes only 1tsp of brandy, sugar, eggs and mascarpone. These recipes are really quite simple compared to yours. However, i really want to try your recipe and i need to know if i can substitute marsala wine with brandy. Also, how many grams of mascarpone cheese is 1 pound?Thank

  • @simplybakes I honestly don't know if the amounts would be the same. Brandy is strong so you might want to use less the first time, maybe try 1/4 cup brandy to 1 1/2 cups espresso. I would also sprinkle a little of the grated chocolate between the layers as well as on top. Try to use real espresso (get some at a coffee shop if you need to.)

  • You said it is not the Italian dessert but actually you came pretty close to the zabaione variation of tiramisu. Another way to make it without raw eggs is making a very hot syrup with 1 part water and 3 parts sugar and pour it very slowly into the yolks while beating them with an el. whisk. Once it cools down, mascarpone can be added and then, with a spatula, some whip cream. Also, you can try with grated chocolate instead of cocoa.

  • Haha, brilliant Marc! Wow it's a lengthy process making tiramisu! I have it sometimes, but I'm never quite sure whether I like it. Always seems a bit too rich. Maybe I need to try a homemade one rather than just a supermarket one bought in a pot. =D

  • Tiramisu in coffee shops is usually good but I can imagine that in a grocery deli, it's way too sweet (as are most deli desserts). This is rich but not so sickeningly sweet--at least not for me.

  • Great video Marc! I LOVE Tiramisu! Marsala, btw, is the 'proper' ingredient for the Sabignone (sp?), tho' I've used Grand Marnier instead (talk about sweet) and I've subbed Kahlua for the Marsala in the espresso. Being rather portly, I'm heavy handed with the shaved chocolate...*sigh* I like your version tho...less sweet is better for many reasons! Thanks again, I love your cooking segments. Now if you could bring some Tiramisu over, I'll brew up the coffee! LOL! Be Well!

  • That made for an ambitious project... I was imagining how it tasted as you added each ingredient... See, if I tried making something like that I'd just eat the ladyfingers, drink the coffee, and forget about it. Such is my patience for cooking :)

  • I've *tatste-tested* tiramisu' in dozens of restaurants throughout Italy, I still proudly brandish them on my hips - I can say that I don't think one of them ever thought to put marsala in the recipe - sounds like a great compliment to the espresso, mascarpone, cream and cocoa.

    There goes the diet! Oh well- it wasn't much of one anyway!

  • This does NOT look, in any way shape or form, like something that'll help me unload the 20 pounds I'm trying to get rid of.

    How amazingly convenient to note that the bottle of Marsala contained *exactly* one cup of wine. Graham Kerr at least used to always let us see his bottomless wine glass...

    Not that I want to be the one that mentions this, but those black lines across the screen... with the writing in them... well... umm... they weren't all exactly in the right place......

  • Actually, 2 glasses of wine :-) But I think Graham was right. The bottle is a glass.

  • Haha! I've heard the "two glasses" bit before. Two glasses = two 16 oz tumblers... :-P

    Well... at least in my kitchen they do...

    I remember one of Graham's shows, where he started working up some wonderful recipe with a full bottle of wine at the side. It was among the ingredients. By the time he got to needing "a short slurp" for the recipe, the bottle was empty. He made an issue of blaming the crew while he uncorked another he had under the counter. It was hilarious.

  • Jump cuts are good for disguising kitchen disasters. Of course, I didn't show the part where I had to remove and transfer the already cream-covered ladyfingers from the larger pan to the smaller one.

  • Tiramisu is one of the few desserts that I really like. I'm a little ticked off at myself for forgetting to extend the photo beyond the video in the final edit. Maybe I'll try to add it to my blog.

  • Nona used brandy or cognac, a copper bowl to beat the eggs, AND it MUST be espresso, sorry but you asked;-)

    I imagine there are a zillion different versions but my Nono was from Venice and Tiramisu originated from there so just sayin'...Nona always did it Nono's way;)

  • I would like cognac but probably not brandy since I'm not a fan of it. Espesso is definitely the way to go if you can.

  • FailAtGame, there are recipes without alcohol. As far as the fluid, I asked myself that, too. The original recipe that I adapted this from called for a third layer but I decided two was enough.

  • I think you make more than you need to ensure the proper proportion of ingredients.
