I didn't do peach cobbler, because I did the blackberry one; however, I have a couple of peach dishes you may like better. They are Sweet and Sassy peach Crumble and Just Peacy Peaches and Cream Crunch. Both are excellent and along the lines of a cobbler!
If you have the powder, you need 4 tablespoons of powder mixed with 1 cup of milk. If you don't have the powder, just mix 1 tablespoon of lemon juice with 1 cup of milk!
Just a fast tip for folks who are afraid to handle the crust. When you have a crust the right size for the pan, roll it onto the rolling pin (loosely) then move the rolling pin over the pan and "unroll" the dough onto the top of the pan. This is especially helpful with thinner crusts-- no more tears!

yum! i love blackberry cobbler! this looks like a great recipe.
my grandpa always makes it during the summer. he counts out like 80 something berries exactly lol. he too is a retired math professor like yourself.
