Really professional camera angles and switching. The young lady that does the cooking isn't the best with English but you can tell that she works hard at and does a great job at communicating. Really professional video...now to go cook it!

The curry paste. Green curry is one of the hotter curry pastes. She uses a lot here. I usually limit it to two tablespoons for a normal potful like she's making here. She uses 1/3 cup here which is too much IMHO.

No. not at all. I like my chicken cook (like really cook), and it doesn't take long time for vege to cook. please adjust to the way you like it. that probably the best to learn how to cook :D thanks for the comment!
when cooking chicken in a liquid such as curry, a cream sauce or some kind of soup base, the meat will not get chewy, rather, it will degrade in a most pleasant and tender way. Frying, baking etc. too long, though, will undoubtedly give you a dried out product. Voila!
@oreovictim The curry paste is very concentrated, she is probably used to very spicy. Also the green is the hottest. I use about half of the amount of paste she uses here. For instance if you do a 1-2 serving amount, like a normal wok style amount, use one tablespoon only, it's stronger than you think.
If you don't like spicy use the yellow curry, to me it has the best flavor. The red is the worst, I don't like it.
I cook mine stir fry style not like a stew as she does.
Surprising, but she uses no fish sauce (nam pla) which is a staple for most Thai dishes including this one. Another thing is that traditionally, the paste is fried and you add the coconut milk/cream gradually. Also, the eggplant will fall apart if you cook it this way. Boil bamboo shoots separately, add veggies to curry and you don't need water. Use a couple tablespoons of fish sauce too. It will turn out much better.

I actually prefer to add the chicken after or with the vegetables so it stays juicier and doesn't overcook and dry out.
I know, it's a question of taste but in my opinion there is no real green curry with salt instead of fish sauce. Fish sauce is the best :)

It depends how big you cut your chicken/veggies. You slice the veggies thinner, they will need less time -> chicken stays soft :)

Great recipe, but I did't add that much water. Your sauce looked a bit wetty.. I like it a bit stiffer..
I also tryed your awesome Spring Roll recipe, but I changed the mushrooms to minced beef and it worked great..
