This is true, but the Shippuden special feature is referring to the Shadow Clone Jutsu, which is Ram, Snake, Tiger, as I have in the video. The other clone jutsu mentioned in the video was the Academy Clone Jutsu.
does it matter if you do the seals with the opposite hand?

Untrue. Only one hand seal is shown when it's not a hugely intense scene. For emphasis they'll show the rest. It's to save time.
