@bella44darkeve20 - There are good, pork tenderloin or beef steak can sub for the venison. I think the thing that makes them extra good is the slow hickory smoking. Apple or pear wood, maybe pecan would also make good smoking wood.

I have done this type of wrap on just about every kind of meat...it really is a tasty treat for sure!!! I marinate my meat in Lawry's Hawain marinade...use a hot jalepeno, and a chuck of onion...dang it is good!!! I know the venison is good!!!!
i have done this for YEARS and its the best thing while watching hunting shows also try this do all this BUT get some fresh cut hickry sticks and smoke them takes longer but is it good put a water pan under your meat to keeps them from drying

@akaeldin - thanks. Wrapping just about anything in bacon and smoking over shag bark hickory will improve it!

How can you go wrong wrapping something in hickory smoked bacon and grilling/smoking it over open flame?
They are tasty - experiment with different combinations of veggies and marinades. Anything can be improved!

You know I like pecan too and apple, pear, white oak are good but old shag bark hickory just does something special.

Congratulations, sausage making isn't that hard once you get past the basics.
Hardest part is just getting stated sometimes but the rewards are knowing with absolute certainty what's in your sausage.
