There is a soft-ball sized venthole on the top right side which is left open during the firing process (usually an hourlong event using juniper wood). After the oven is "charged" after the hour of firing, then the coals are scraped out and the venthole plugged with a stone and a sandstone door. We have made field-expedient ovens on our walkabouts which involved dry-stacking local sandstone or basalt and then covering with a stone top. Earth Ovens is a good book to start with.
The reason on the height is due to tradition. This horno was modeled after the Zuni and Hopi style bread ovens and this is the type they built. My friend Randy Miller who did the teaching, showed us this style and we built accordingly. I have done several others on my own and they can be completed in many different ceilings and domed shapes. Check out Kiko Denzer's fine book for more info and tips.
Yes, we do something with adobe or Hogan construction during our longer programs. We will only be running our 3, 7,and 21-day programs for the next few years due to ongoing work with the military so our 9-weeker will be back some time in the future.

I am wondering about air intake and exhaust venting ... ?
Is there a vent-hole, on top ?
Is there an intake air channel or vent of some sort ?
I might like to try an expedient version, using dry-stacked commercial fire-bricks.
Also might like to try some "found" desert rocks ... limestone or sandstone ?
