If our bodies and th Universe are all just forms of energy, or stardust, or supra-String Theory vibration, or such shouldn't we be able to do pretty much what we'd desire/like to do??

Yes, and we can if dissolve our mental barriers to it. No doubt there are already humans in the past who have done the things you speak of (its pretty easy to find tales of it in earlier times before the collective was so resistant to seeing miraculous things that couldn't be immediately explained) but now.....using the knowledge we have of law of attraction we know we can't perceive what we aren't the vibration of... We're pretty skeptical of that stuff = we don't see it.

For example, is it more visceral to materialize on a perfect getaway island or is it more visceral to synchronously come about tickets to a perfect cruise ship where you meet a perfect friend on the way to that island, .etc?

Yes and it is his choice. He chose to be in a physical world with spatial and temporal delays and processes because without the delays that result from focusing on contrast, there would be no experience of anything at all. And I'm sure you agree there is at least one thing he actually prefers to savor and experience slowly/viscerally. Just because there is, he as a whole being chooses to remain physical where vibrations take a bit of time and focus to manifest.
