he only has one set of cards but they have the brother cards printed the the other ends, hence the cards have all changed, this explains why he flips them before presenting them.

Very clever trick, all the cards change but they are the brother cards that look simular, when he tells you to think of one and only one, it's the only card you look for to see if it's missing when in actual fact, they all go missing, smart stuff.

@cliptrix The only legit card is Jack of hearts, (which is the one that he removes from the deck), The rest of the cards have a different suite on the bottom.. he then just turns the cards upside down and when he fans them open they are all different. Notice he covers the bottom of the front card with his hand in the end (he doesn't have to that in the beginning cos the 'legit' jack of heart was in front, and the rest of the cards cleverly hiding their bottom halves by the way he fans the cards)
