I will have to try this recipe in a day or two. Or do you just need a little extra room thus you can have it over hanging the sides with out overly smashing or deforming it?
i do not know , i just enjoy the tune , a bit less than the PITA BREADS ,I MAKE. Good food with good family and friends make it more enjoyable with good music and good homemade wine and in the end , good life for all of us. I do not know the source or the words, but i ENJOY THE QUICK RYTHEM AND TUNE, so enjoy it. ps. as an after thought , windows has a recorder or get one separate one and record it while playing it from my VIDEO ON THE internet. OKAY. if the dough is fermented right, and the rolling of the ball evenly done, and the cooking temperature is right about 500 oF, or more like a commercial bakery or earthen or tandoor oven pita bread will form TWO LAYERS. (NOT liars , check the meaning in dictionary,please. In USA many people use commersial pita breads, or POCKET BREAD OF egypt,syria,lebanon or any other similar country. it is the same method ,flour,yeast wate ferment,bake.

I am not sure what you are trying to say here? Please explain if you will? I thought the entire idea of making pita bread is that the "two layers separate and form a pocket" from high cooking.. I really want to get what you are referring to?
make sure the oven is pre-heated with an inverted rectangular baking dish or a baking stone prior to rolloing the pita dough balls,let the dough balls or rolled breads rest for 15 minutes. Also after first doubling of the volume, do not wait for too long to bake the breads, they may not puff... you may end up with hard chips only. Use the breads ASAP.
If you like the HUMMUS , you can change the flavors with differnt spices , italian mexican indian and chinese style hummus to go with pita chips, potato chips tortilla chips, corn chips. and so on...ENJOY.

4.un-even leavening or kneading of the dough and rolling the dough too much, some CO2 escaped already.
5. not enough moisture or excessive drying out of dough can result in low moisture and due to such not enough steam generated to puff.
6.small pinholes during the rolling allows the gasses to escape prematurely.. and NO PUFF...?
