I make a recipe similar to this and I don't use any alcohol at all. I cook cranberries with about 1/2 cup of sugar and some water or apple juice. You can use any juice. This really depends on your tastes. You can add more or less sugar. Cooking is an experimental science especially with tart cranberries.
