  • how long in the dehydrator did it take to do them?? I have a Excalibur 3900, I did my first set with mashed sweet potatoes and it took over 12 hours to do them almost 15 hours, wasn't sure if it was supposed to be crisp or flexi ?

  • Anyone have any suggestions on this, Once my white or sweet potatoes are dried some of the edges are sharp and puncture my bags. In some cases 3 layers of bags still dont do the trick and I have to remove the offending potato chip. I have the same problem with sweet potatoes that were rolled out smooth when wet.

    Yes, by rolling the sweet potatoes out flat then cutting into squares they wil not puncture the bags. Another way to deal with this problem is to use the mylar bag idea that you will find on my web site in the video section. This should help with the problem. Tammy

  • After you roll out the boiled potatoes, can you add spices (like creole season), then dehydrate?

    yes, you can use any spice of choice except salt. Using salt prior to dehydrating will increase the rehydrating time. Tammy

  • I live in Thailand since the cost of shipping an excalibur would be prohibitive can I just buy the trays and make my own heated ventilated box? All I can find here is to make the trays is aluminum or fiberglass screening which I do not want to use.

  • Great idea! I will definately do this every time there is a sale on sweet potatoes. Instead of boiling them I would suggest cooking them in a slow cooker. That way they are cooking in their own juices & you don't have to worry about over cooking =)

  • I just did 40 lbs with this method (much easier), thanks so much Paula and Tammy.

    What I did was I baked about 20 lbs at a time in batches and each pan I cooled and peeled and put them in a plastic bag and stored them in the fridge while I was running a batch through the dehydrator about 10 to 12 hrs. I started the night this video came out and it made the whole thing so much easier.

    Place the rolled sweet potato between the wax paper, leave between the wax paper and freeze until you have enough room in your dehydrator to fill a second time. You will need to remove the wax paper while still frozen prior to placing on the trays and dehydrating. Remember there is no need to thaw before dehydrating. Tammy

  • It's so nice to hear from you again.  This spring I'm going to do your Lasagna garden as per your videos so, I will be asking a lot of questions. I think you can do it with all vegetables and make vegetable chips for snacking. Stay in touch. Tammy

  • Right back at ya -- I always get excited when I see there's a new Dehydrate2Store video in my subscriptions! Now, if you're going to do a lasagna bed to plant in right away, you'll want to layer with FINISHED compost, not the "raw" materials like did as well as peat moss, top soil, and so forth. We're having a very wet, COOL late summer / early Fall and I'm having trouble getting tomatoes, etc. to ripen on the vine.

  • Ohhhhh -- vege chips like the expensive ones in the stores. (I love those). I never thought of THAT application -- brilliant!! I'm going to try that!!! Of course, I'm going to add salt to 'em, otherwise they'd be waaaay too healthy and my body would reject them.

  • Can this be done with white potatoes? And can you flake them, like they do for instant potatoes(no I never eat that stuff), or is that freeze dried?

  • Hi Kashmir,

    Dehydrated white potatoes are great and can last up to 30 years if stored properly.

    However, you can not achieve mash potatoes from white or yellow potatoes they have to be purchased from a company with special commercial equipment. Don't let this stop you from dehydrating slice and chopped white/yellow potatoes, when re-hydrated they taste and look like fresh potatoes.

  • how long did it take to dehydrate them. and do you think they would be an exchange for eating potato chips ? or did you just add them to cooked recipes in the future?

  • Hi crosspecans,

    It takes about 8-10 hours. Yes, you can eat them like a potato chip but, maybe I would add another item to the sweet potatoes like squash or something to make the chip lighter and easier to chew like a chip. Make sure you roll it real thin.

    I'll work on some different ingredients and let you know what I come up with.

  • i was wondering if you blended some greens and garlic into a thick paste with some water. mix it into the smashed potato.... or what if you used jalapenos minced with the sweet potato would be sweet and hot.
