Here is a chain of Buu's transformations:

Kid Buu + Southern Supreme Kai = Ultra Buu (Stronger than Kid Buu)

Ultra Buu + Grand Supreme Kai (Daikaioh in the FUNimation Dub) = Fat Buu

When When Ultra Buu absorbed Grand Supreme Kai he became weaker because Grand Supreme Kai was the most pure hearted of all of the Supreme Kais and also the strongest. Souther Supreme Kai was the 2nd strongest.

this is all wrong. gohan should have lost. remember gohan was no match for buu when he absorb gotanks and piccolo. If buu absorb goku then there is no hope for them because buu can restore himself after every blow and no one knows how to make a ganki except goku and kiao but kiao isn't strong enough to use a strong ganki like goku so the universe is lost if goku is lost unless gohan gotanks vageta all fuse into one. it can happen. just do one fuse after the next until one is left.

It is because of this "double" transformation that left Vegeta confused to (roughly) say that he can't tell whether Buu had become stronger or weaker.

It does make sense to have gotten all of the Z fighters to fight kid buu. However if kid buu was out matched then he might have resorted to absorbing again and the cycle would start again. If you ask me gohan should have killed super buu and the series should have ended. But this ending was pretty satisfying too.
