There is no true ending. If there is a catherine 2 and we get to play as vincent again. But this time, as a married man. Then Katherine is the canon ending. If we play a sequel and we see Vincent in hell doing 24 hr orgies, then Catherine would be the canon ending. Which is how I think it ought to be.
