  • I think if I try this, I won't soak w/salt beforehand, but will add a pinch of jaggery to round out the flavors, as something sweet does enhance the heat of the chiles. Looks great.

  • Bitter melon has a lot of nutrient and goodness but taste horrible. The way he cooked it destroyed much of it and making it meaningless to eat it. For the taste, use other ingredients. For the nutrient, eat bitter melon raw.

  • Laughed my a.... off. Just bought bitter melon for the first, wanted to know how to cook. I would say, do not, I repeat do not drink the juice.

  • u dont add sugar in any of the dishes in kerala...expessially bitter guard fry....just fry it...but dont add coriander powder in any fries.....just add turmeric powder, green chilly, curry leaf...thts it.....nothing more needed..ofcourse salt......

  • @Thedude90000 If you apply the salt and squeeze out the juice, most of the bitterness is gone that is almost 95% of the bitterness. Enjoying the taste of Karela is an accquired taste, I have it mostly for its health benefits but I do enjoy the taste more now than I did as a child.

  • chef, v make the dish with a little twist........v add little milk to 1/2 tsp sugar and 1/2 tsp jaggery in the end. It'a a must try dish. thank u.

  • Please read wikipedia about how to dose the Fruit! If you get to much of it you get problems with your stomach! It´s not poison but you have to handle care!Try to buy dry Fruit piece as Tee! China Shop you can find it! 2$ 300g

  • This is one vegetable that I have failed to gastronomically conquer. No matter how I cook it, I can't stomach it, too damn bitter, completely unpleasant to my taste buds. Edible but not eatable. But I regularly drink its juice, drinkable though, just had a glass of it just 10 minutes ago...

  • Those things sure are bitter-- about half hour of sautéeing and too bitter- that's after squeezing the juice out with plenty salt to start-- May add some lemon juice to cut the bitterness if cooking won't do it-- Still waiting

  • This looks interesting however I don't see the point of using bitter melon especially when it looks like the goal is to remove/dilute the taste of the main ingredient. I could just be missing something here since I have never even tried bitter melon but it does't look like an ingredient that is desirable to cook with.

  • Please don't use this method it is not going to work. we have wasted 2 pounds of bitter melon in doing this method and also lot of ingredients. In this method he has not told how to remove the bitterness and just by squeezing this will not go away. The right method will be posted in the same website pretty soon. All this is stated with personal experience.

  • Hey chef, it was really funny, I am still laughing. Anyway just wanted to inform that only 30 to 40 ml of bittermelon juice ( unsalted) is recommended in 24 hrs. otherwise it can upset your stomach.

  • what he was saying about boiling the leaf of the plant and drinking it... my mom makes that for me to drink its really not that bad probably not as bitter as the stuff he drank but the leaves are full of iron and it clears up ur skin, my mum gives it to me if i get hives or alotta zits and its really good for you... anything that is natural and good for you probably tastes horrible.

  • that juice is used during good friday, in remembrance of what they gave Jesus to drink when he asked for water because he was thirsty. Its called bittergourd drink. mixed with rose water, bitter gourd juice, vinegar.

  • bittermelon is not for the faint of heart. it is more bitter than eating a handful of coffee grounds! bleh! definitely an aquired taste! My mother is from the philiipines, and they eat it often, i used to cry when she made me eat it.
