All of the noble hobbies were more popular in the 80's & 90's. ;)
As nice as it is to see new videos, I always enjoy the old ones the most.

how did he put the rubber in the plane with that piece of wire?

It's not a wire, but a wooden dowel, called a stuffer stick. Prongs on the end hold the rubber open about 1/4" allowing him to slide it over the rear peg.
