    Jasmine Rice is not good for sushi, it doesnt absorb as well as Sushi Rice. Most Saltwater fiah is good for sushi as long as it is fresh...

  • Unreal! He had to prep the daikon I would think by sending it through something like a corn cob cutter to make it so perfectly round. I wish they would of showed how they prepped it.

    There was no prepping of the Daikon, it was just peeled before using. We get straight long radishes here in Spain. Anyway, if the Daikon is "out of shape", it just needs to be trimmed in to an oblong shape..

    There are many recipes for preparing the rice, each a little different, you should look at the videos online and make you own choice, remembering that all rice cooks different...

  • i never see chefs wearing gloves.I usually wear it and then spray some cooking oil on to it to prevent rice from sticking.

  • amazing. Slicing the Daikon just blew my mind.  I'm a pro chef and have never seen that before. I know you can get a sort of rolling machine, like a pasta machine, that does it, but your chef's method is unreal. I shall use it, or at least try, when I make sushi tomorrow. Many thanks!

  • The Daikon gives it a "crunchy" exterior, you can also use Cucumber.

    We wrap it in Daikon because that is one way that we serve the dish, but it is not needed.

    the normal sauce for sushi is soy sauce, available in most big grocery or asian food market.

  • The White Roll, and what we wrap the sushi with at the end is a Daikon, or Japanese Radish.

    Hope that helps.
